Meet the Staff
Cindy Smith, RD
Owner of Nutrition Care, LLC
After gaining 21+ years of experience in the field of dietetics, Cindy saw the need for nutrition counseling outside of the hospital setting. For the past 8 years, she has successfully applied her knowledge and skill set to help her patients regain control of their health through gentle but significant changes in their eating habits. Cindy specializes in general nutrition, weight management, thyroid disease, GI issues, eating disorders, diabetes, and nutrition post bariatric surgery.
Cindy is a proud member of the Academy of Nutrition and Dietetics, Entrepreneur Dietetic Practice Group, and Community Development Foundation.
Samantha Parker, RDN
Samantha is a strong advocate for living a balanced lifestyle and practicing what she preaches. She believes nutrition is a fundamental tier in one’s health and strives daily to find new ways to change others view of food. She approaches nutrition from and integrative, functional perspective and uses this to unlock the body’s potential to heal as well as perform.
After receiving her Bachelors of Science from the University of Mississippi in Dietetics and Nutrition, she moved to Nashville, Tn to gain experience in clinical nutrition and food-service management at Tri-Star Henderson Medical Center. She began the final step in her journey to become an RDN at Iowa State University. There, she completed her dietetic internship and proudly accepted a position with Nutrition Care as a registered dietitian nutritionist. At Nutrition Care, Samantha focuses on helping others optimize their health by meeting them where they are in their health/fitness journey. As each person’s body and lifestyle are different, their diet should be too. Samantha creates individualized plans and incorporates intuitive eating into her education model to provide each client with the tools needed to make long-lasting change.
In her free time, Samantha enjoys getting creative in the kitchen and trying new recipes. When she isn’t in the kitchen, you can find her snuggling with her fur child, Evie, and planning her next trip with her friends to explore a new city.
Sally Kate Collins, MS RDN CDE
Sally Kate serves as a clinical dietitian and diabetes educator at Nutrition Care. Sally Kate received her Bachelor of Arts in Psychology from the University of Mississippi and her Master of Science in Food Science and Human Nutrition along with her coordinated dietetic internship from Colorado State University. As a Certified Diabetes Educator (CDE), Mrs. Collins has experience counseling adult and pediatric patients living with diabetes here in North Mississippi.
Sally Kate is married to Tatum Collins and has a son, Shep. Outside of coaching her patients towards an enjoyable and healthy lifestyle, some of her passions include cheering on Ole Miss athletics, using her husband as a guinea pig for new recipes, and volunteering for various organizations in the Tupelo area.
